FORT COLLINS, Colo. — Edison’s Ice Cream is set to open its first brick-and-mortar location this spring inside the historic Northern Hotel building at 172 N. College Avenue in Fort Collins. The space, previously occupied by Starbucks, will feature a retro-inspired design and a menu catering to diverse dietary needs, including dairy-free and gluten-free options.
Ahead of the official opening, the ice cream brand will serve customers across northern Colorado through its mobile cart and offer online pint sales, the company announced on Tuesday. Edison’s aims to create an inclusive atmosphere where everyone, regardless of dietary restrictions, can enjoy high-quality ice cream.
Nate Frary, owner of Edison’s Ice Cream, emphasized the importance of investing in both the product and the team behind it. “A truly extraordinary customer experience starts with a team that feels valued and supported,” Frary said.
The new shop will provide a nostalgic setting for families and friends to come together, with an emphasis on creating memorable moments. While the official opening date has yet to be confirmed, customers can sign up for updates on the company’s website. The mobile cart is also available for private events, including weddings.
