BETHLEHEM, Pa. — The creators behind the popular Batch Microcreamery are expanding their footprint in the Lehigh Valley with a new venture, Wondaffle, a unique combination of waffles and ice cream. The new store will open its doors on March 21 at 307 E. Third St. in South Bethlehem.
Wondaffle, a collaboration between Manny Rodriguez and Rick Pongracz, will offer customers a variety of handcrafted waffles paired with Batch’s signature super premium ice cream. The grand opening is set to begin at 3 p.m., with regular operating hours to be announced soon on the store’s social media pages.
Initially announced as “Batter Up by Batch Microcreamery” in February 2024, the name of the new concept was changed due to trademark concerns raised by another company. However, despite the name change, Pongracz confirmed that the core concept remains the same.
The menu will feature a variety of waffles, including signature Liege waffles, bubble waffles, waffle cones, and waffle bowls. Customers can expect a range of ice cream flavors, such as cold brew, mint chip, lavender honey, and cookie monster. There will also be rotating seasonal options, as well as vegan choices like vegan vanilla and vegan cold brew.
Wondaffle’s offerings will include ice cream sandwiches, waffle chips with ice cream nachos, bubble waffle cones, and specialty Belgian Liege waffles with a variety of toppings like Nutella, bananas, and strawberries. Additionally, gluten-free waffles will be available, alongside milkshakes and a variety of toppings such as caramel, hot fudge, peanut butter, and fresh fruits.
The shop will have seating for around 40 customers inside and will also offer outdoor seating. Orders can be placed either at the counter with an associate or through a self-service kiosk.
Mike Perrucci, owner of Peron Development, expressed his enthusiasm for the new venture, saying, “Manny Rodriguez and Rick Pongracz are two great local entrepreneurs with a proven track record in the Lehigh Valley. We know they will be successful.”
Wondaffle is the latest expansion from the owners of Batch Microcreamery, which has been serving hand-crafted ice cream in the Lehigh Valley since 2019. In addition to the new storefront in Bethlehem, Batch operates locations at Promenade Saucon Valley, Shepherd Hills Golf Club, and a food truck that caters private events.
