Betty Rae’s Expands with New Ice Cream Shop in Southern Overland Park

Kansas City, MO – Betty Rae’s, the popular ice cream shop based in Kansas City, Missouri, is set to open a new location in southern Overland Park. Owner Matt Shatto announced that the new shop, located at 6936 W. 135th St. in Deer Creek Marketplace, is expected to open in May. The space, previously occupied by the Fat Bee bubble tea cafe, is near Hen House grocery store.

The Overland Park shop will be Betty Rae’s fourth location in Johnson County, expanding the ice cream brand’s reach across the region. Shatto noted that the store will operate from 11 a.m. to 9 p.m. Sunday through Thursday, and 11 a.m. to 10 p.m. on Fridays and Saturdays.

This new opening follows Betty Rae’s rapid expansion in 2023, with new locations in Merriam and Prairie Village. The Merriam shop doubles as a production facility and test kitchen, where customers can sample new flavors before they are rolled out to other locations.

The menu at Betty Rae’s features a variety of fan-favorite ice cream flavors, including cereal milk, cookie dough, s’mores, and lavender honey, along with rotating specials like matcha, pistachio, and black forest cake. The shop also offers dairy-free options. Shatto emphasized that the Overland Park location will maintain the brand’s commitment to scratch-made, high-quality ice cream, paired with exceptional customer service.

“We are excited about the 135th Street corridor,” Shatto said. “It’s a great area, and we are fond of the many other businesses along that stretch.”

Founded in 2016 in Kansas City’s Waldo neighborhood, Betty Rae’s flagship location set the stage for its growth. The brand also has a presence in the River Market and has made waves in the Kansas City area for its artisan ice cream and community-focused approach.

Beyond local expansion, Betty Rae’s is now growing its franchising program, with its first out-of-state franchise recently opening in Omaha, Nebraska. Shatto revealed that the company plans to continue expanding both within Kansas City and beyond.

“Our goal is to bring Kansas City’s best ice cream to as many regions as possible,” Shatto said. “We’re not shying away from growth, whether it’s in South Johnson County, Lee’s Summit, or other areas around the metro.”
