Bastrop, TX — Jack and Aly Plimpton, a newlywed couple who relocated to Bastrop in 2022, are set to bring a popular frozen treat destination to the area with the opening of a Jeremiah’s Italian Ice shop in 2025. The new shop, located near the upcoming Chipotle on Highway 71, will offer a variety of frozen desserts, including housemade Italian ice, ice cream, and the brand’s signature “jelati”—a layered combination of the two.
A Sweet Addition to Bastrop
The Plimptons envision the new establishment as a vibrant community hub, providing a fun and inviting atmosphere for locals and visitors alike. “We want to create a space where people can gather, whether it’s for an after-school treat, an evening outing, or a quick stop during errands,” said Jack Plimpton. The shop will feature both indoor and outdoor seating, as well as convenient walk-up windows for those on the go.
A Personal Connection to Bastrop
The couple’s move to Bastrop was inspired by their visit to the Bastrop Music Festival in 2022, where they quickly fell in love with the town. “We instantly connected with the community and its charm,” Jack shared. “Our goal is to contribute to and enhance this wonderful place while preserving its unique character.”
Jeremiah’s Italian Ice is slated to open in mid-2025 at 707 Highway 71, Bastrop. The Plimptons are excited to bring their vision to life and look forward to becoming a part of the fabric of this growing community.
