CityUHK Launches Ice Cream Made from Fresh Milk Produced at University Farm

The City University of Hong Kong (CityUHK) has unveiled its latest creation, CityUHK Ice Cream, made from fresh milk sourced from its dairy farm in Lam Tsuen, Tai Po. The ice cream is now available for purchase at the CityUHK Milk Product Counter.

The new ice cream collection includes six flavours: five regular options—Milk, Sesame, Hojicha, Yuzu, and Chocolate—and one rotating seasonal flavour, which begins with Strawberry. These flavours combine traditional favourites with innovative selections, offering a unique experience for ice cream lovers.

The launch ceremony, which took place on Valentine’s Day, featured Professor Vanessa Barrs, Dean of the Jockey Club College of Veterinary Medicine and Life Sciences (JCC), along with CityUHK staff and students. The event added a special touch to the day’s celebrations.

“We are thrilled to see our farm-to-table concept come to life through CityUHK Ice Cream. Our farm stands as a model for sustainable agriculture, and it is rewarding to see its resources transformed into delicious ice cream, enriching our students’ understanding of sustainable food production and food safety,” said Professor Barrs.

CityUHK staff and students also participated in a blind tasting session, where they sampled each flavour and discovered the distinct characteristics of the ice cream.

CityUHK is pioneering the One Health concept, which emphasizes the interconnectedness of human, animal, and environmental health. Following the success of CityUHK Milk, which was introduced last year, the new ice cream is another product of the University Farm. The farm serves as a training ground for students in the university’s Bachelor of Veterinary Medicine (BVM) program, offering hands-on experience in animal care, veterinary examination, farm management, and food production safety. This farm-to-table initiative enhances students’ practical knowledge in sustainable agriculture.

In a milestone achievement, the BVM programme received dual accreditation in September 2023 from both the Royal College of Veterinary Surgeons in the UK and the Australasian Veterinary Boards Council. This accreditation makes it the only BVM programme in Asia to be recognized by these prestigious bodies.

CityUHK continues to embrace innovation and sustainability through its farm-driven initiatives, providing students with valuable real-world experiences while contributing to the local food landscape.
