Salt & Straw, the Portland-based ice cream brand known for its creative and unique flavors, is expanding into the Greater Seattle area with two new scoop shops. The company announced that it will open locations in downtown Seattle at 102 Pike Street and in Redmond at 16595 Redmond Way, Suite 170.
Founded in 2011 by cousins Kim and Tyler Malek, Salt & Straw has built a reputation for blending artisan ice cream with unusual ingredients. The new locations are expected to open daily from 11 a.m. to 11 p.m.
“We’re thrilled to plant deeper roots in downtown Seattle and grow with this amazing community,” said co-founder Kim Malek. Tyler Malek added, “Pike Place is where so many unforgettable food stories begin, and we’re excited to be part of that legacy.”
In addition to serving ice cream, Salt & Straw plans to hire around 20 employees per location, focusing on inclusive hiring practices. The company is committed to offering job opportunities to people with barriers to employment, including those from BIPOC, LGBTQIA+, and disabled communities, as well as individuals with past criminal justice involvement.
