As the days warm up and spring settles in, a unique collaboration between Bonnie Brae Ice Cream and Hampton Water Rosé is offering a refreshing twist on summer treats. The Denver-based ice cream shop has partnered with Hampton Water Wine Co., the rosé brand founded by rock icon Jon Bon Jovi, to create a limited-edition Strawberry Rosé Sorbet.
This partnership is a celebration of both good food and music, blending nostalgia with creativity. As the sorbet quickly becomes a must-try seasonal offering, customers are encouraged to visit Bonnie Brae Ice Cream before the limited-time flavor disappears, much like the famed Wild West bandit from Bon Jovi’s hit song Wanted Dead or Alive.
The collaboration has sparked interest, and we sat down with Adrian Simon, co-owner of Bonnie Brae Ice Cream, to learn more about the inspiration behind the pairing and future projects.
303 Magazine: The Strawberry Rosé Sorbet seems like it will appeal to many Gen X fans. What inspired this collaboration with Hampton Water Wine Co., and can we expect more partnerships in the future?
Adrian Simon: We’re always looking for ways to bring something fresh and fun to Denver. Collaborating with Hampton Water was a natural fit. Their rosé is iconic, and pairing it with our house-made sorbet just made sense. It’s refreshing, nostalgic, and has that grown-up twist that’s perfect for summer. As for future collaborations, we’re definitely open to exploring more. In fact, we’re excited about our ongoing partnership with 7Cellars, which has led to a delicious cabernet and Nutella flavor. And we’ve got an exciting new partnership with Casa Noble Tequila, launching just in time for Cinco de Mayo!
303 Magazine: With summer around the corner, the Strawberry Rosé Sorbet is poised to be a seasonal favorite. Can you share the recipe for those who want to try it at home, and where can they find the ingredients?
Adrian Simon: We love that people are excited about it! The sorbet is made with fresh strawberries and Hampton Water Rosé, blended to perfection. To make your version at home, start with strawberries (fresh or frozen), sugar, and your favorite rosé—Hampton Water is our pick, of course.
303 Magazine: Are there any other new flavors in the works for this summer?
Adrian Simon: Absolutely! We’re always dreaming up new seasonal flavors, especially as we head into our busiest time of the year. Without giving too much away, let’s just say this summer’s lineup has something for everyone. A tequila flavor in partnership with Casa Noble Tequila is coming soon, so keep an eye out!
303 Magazine: Is there anything else Bonnie Brae Ice Cream would like to share?
Adrian Simon: We just want to thank our incredible community for supporting us year after year. Bonnie Brae Ice Cream has been serving up scoops in Denver for almost 40 years, and we’re just getting started. Don’t forget—our Strawberry Rosé Sorbet is available for a limited time, so come grab a scoop before it’s gone!
As summer approaches, it’s clear that Bonnie Brae Ice Cream is ready to cool down the season with fresh, inventive flavors. The Strawberry Rosé Sorbet is just the beginning of what promises to be a sweet summer lineup. So, don’t wait—head over to Bonnie Brae Ice Cream and enjoy the limited-time treat before it melts away.
