Better Juice, an Israeli food-tech innovator, is spearheading a global shift towards healthier ice creams and sorbets through its groundbreaking enzymatic technology. Recently granted GRAS approval by the U.S. FDA, the company is set to introduce its low-sugar solutions to American markets, promising significant reductions in sugar content without compromising flavor.
Based in Ness Ziona, Israel, Better Juice specializes in reducing sugar in fruit-based products like sorbets. By utilizing patented enzymatic processes on fruit concentrates and purées, the company achieves sugar reductions ranging from 50% to 70%, along with a calorie decrease of up to 40%. This development addresses the high natural sugar content typically found in such treats, enhancing their appeal to health-conscious consumers.
Gali Yarpm, co-founder and CEO of Better Juice, explains the innovation, stating, “Our technology allows us to produce sorbets with as little as 2% sugar content, maintaining their fruity essence while offering fewer calories and a lower glycemic index compared to traditional options.”
The enzymatic technology works by converting sugar compositions in fruit juices into indigestible fibers using non-genetically modified microorganisms. This process preserves the natural vitamins, dietary fibers, and nutrients present in fruits, ensuring a wholesome product.
Better Juice plans to deploy its technology via compact, easy-to-use units to ice cream chains and sorbet manufacturers across the United States. This approach will enable these producers to adjust sugar levels in their products by up to 80%, accommodating varying consumer preferences for sweetness.
