Nico Vergara, a passionate entrepreneur, is set to introduce a taste of New Zealand to Cannery Row with the opening of Nico’s Ice Cream, marking the dessert shop’s third location. Originating from Portland, Nico’s Ice Cream distinguishes itself with a unique approach inspired by “real fruit ice cream,” a concept popularized in New Zealand.
Vergara, whose background includes working with dairy companies and drawing inspiration from successful ice cream ventures, emphasizes using fresh fruits like blueberries, strawberries, raspberries, mango, and kiwi blended into soft-textured ice cream. Nico’s Ice Cream utilizes Tillamook vanilla and also offers a vegan option featuring Coconut Bliss.
The forthcoming location at 711 Cannery Row will occupy the historic Monterey Canning Company building, positioning itself amidst the bustling tourist district. Vergara expresses excitement about joining Monterey’s vibrant community, noting parallels with Portland’s dynamic culinary scene.
With a menu highlighting Oregon’s berry bounty and occasional playful additions like Reese’s Puffs or Fruit Loops, Nico’s Ice Cream aims to cater to diverse tastes while maintaining a commitment to quality and freshness. Pending final approvals, the shop anticipates opening in mid-July, ready to delight locals and visitors alike with its refreshing treats.
