Vergara, whose background includes working with dairy companies and drawing inspiration from successful ice cream ventures, emphasizes using fresh fruits like blueberries, strawberries, raspberries, mango, and kiwi blended into soft-textured ice cream. Nico’s Ice Cream utilizes Tillamook vanilla and also offers a vegan option featuring Coconut Bliss.
The forthcoming location at 711 Cannery Row will occupy the historic Monterey Canning Company building, positioning itself amidst the bustling tourist district. Vergara expresses excitement about joining Monterey’s vibrant community, noting parallels with Portland’s dynamic culinary scene.
